Whole Roasted Fava Beans

Cooking favas this way makes them completely edible and delicious. Choose firm, fresh beans and wash them well in cold water then drain. Pat dry with paper towels and place in a big bowl. Sprinkle generously with olive oil, cracked pepper and rough sea salt of your choice. Roast for twenty to twenty-five minutes in a 400 degree oven and serve immediately.
